Blackberry Cobbler

  • 1 1/4 cup sugar, divided
  • 1/3 cup (1 stick) butter, softened
  • 1 1/2 cups all purpose flour
  • 1 cup milk (or Half & Half)
  • 1 Tbsp. baking powder
  • 1/4 teasp. salt
  • 2 packages (12 ounces each) frozen blackberries, thawed. [Or use 3 1/2 cups fresh blackberries, blueberries, or other berries. Other frozen berries work, too.]
  1. Preheat oven to 375° F.
  2. Use 9″ x 13″ pan and coat with non-stick cooking spray.
  3. In a large bowl, combine 3/4 cup sugar, butter and milk and mix well.
  4. In a medium bowl, combine flour, baking powder and salt.
  5. Add the flour mixture to wet ingredients in stages, mixing well.
  6. Pour batter into prepared baking dish.
  7. Clean and sort berries, if fresh. Add remaining 1/2 cup of sugar to erries, mix well and spoon over batter.
  8. Bake for 40 to 45 minutes or until bubbly and golden.
  9. Serve with ice cream or whipped cream and enjoy!
