- 1 1/4 cup sugar, divided
- 1/3 cup (1 stick) butter, softened
- 1 1/2 cups all purpose flour
- 1 cup milk (or Half & Half)
- 1 Tbsp. baking powder
- 1/4 teasp. salt
- 2 packages (12 ounces each) frozen blackberries, thawed. [Or use 3 1/2 cups fresh blackberries, blueberries, or other berries. Other frozen berries work, too.]
- Preheat oven to 375° F.
- Use 9″ x 13″ pan and coat with non-stick cooking spray.
- In a large bowl, combine 3/4 cup sugar, butter and milk and mix well.
- In a medium bowl, combine flour, baking powder and salt.
- Add the flour mixture to wet ingredients in stages, mixing well.
- Pour batter into prepared baking dish.
- Clean and sort berries, if fresh. Add remaining 1/2 cup of sugar to erries, mix well and spoon over batter.
- Bake for 40 to 45 minutes or until bubbly and golden.
- Serve with ice cream or whipped cream and enjoy!
