Corn fritters

  • 1 1/4 cups sifted flour
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 4 egg yolks
  • 1/4 teaspoon paprika
  • 2 cups drained corn
  • 4 egg whites beaten stiff
  1. Sift flour, baking powder, and salt.
  2. Combine egg yolks, paprika, and corn.
  3. Fold flour mixture into egg/corn mixture. This will be rather dry, but mix it well.
  4. Fold in egg whites.
  5. Drop by tablespoons into hot deep fat and fry until golden brown (about 5 or 10 minutes)
