Spice Pumpkin Cake

  • 1/2 cup shortening
  • 1 1/4 cups sugar
  • 2 eggs
  • 2 1/4 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon ginger
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon baking soda
  • 2 cups flour (sifted)
  • 1 cup cooked pumpkin or applesauce
  • 3/4 cup milk
  • 1/2 cup chopped nuts
  1. Cream shortening and add sugar. Cream thoroughly.
  2. Blend in eaten eggs.
  3. Sift flour, baking powder, baking soda, salt, and spices together.
  4. Mix pumpkin and milk in another bowl.
  5. Add pumpkin-milk and flour mixtures alternately to the butter-sugar-eggs.
  6. Blend in chopped nuts.
  7. Bake in cake pan or larger pans for 50-55 minutes at 350ยบ.
  • The “1/2 t soda” in the ingredients wasn’t mentioned in the instructions. Editorial change to convert that to “1/2 teaspoon baking soda” and sift with other dry ingredients.
