- 1/2 cup shortening
- 1 1/4 cups sugar
- 2 eggs
- 2 1/4 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 teaspoon cinnamon
- 1/2 teaspoon ginger
- 1/2 teaspoon nutmeg
- 1/2 teaspoon baking soda
- 2 cups flour (sifted)
- 1 cup cooked pumpkin or applesauce
- 3/4 cup milk
- 1/2 cup chopped nuts
- Cream shortening and add sugar. Cream thoroughly.
- Blend in eaten eggs.
- Sift flour, baking powder, baking soda, salt, and spices together.
- Mix pumpkin and milk in another bowl.
- Add pumpkin-milk and flour mixtures alternately to the butter-sugar-eggs.
- Blend in chopped nuts.
- Bake in cake pan or larger pans for 50-55 minutes at 350ยบ.
- The “1/2 t soda” in the ingredients wasn’t mentioned in the instructions. Editorial change to convert that to “1/2 teaspoon baking soda” and sift with other dry ingredients.
