- 2 pounds ground beef
- 2 cups soft bread cubes
- 1/2 cup milk
- 1/4 cup minced onion
- 1 teaspoon ground nutmeg
- 1 teaspoon salt and 1/2 teaspoon pepper
- 1 egg
Filling
- 1/2 cup minced celery
- 1/2 cup mushroom pieces
- 1/2 cup butter or margarine
- 1/2 cup minced onion
- 1 cup soft bread cubes
- 1/2 cup chopped parsley
- 1/2 cup (about 3 oz.) crumbled blue cheese
- Soak bread cubes in milk, combine with beef, minced onions, seasoning, and egg.
- Mix thoroughly.
- Pat mixture into 8×14″ rectangle on sheet of waxed paper.
- Saute celery, mushrooms and onion in margarine until soft.
- Add rest of ingredients and mix well.
- Spread filling on meat, roll up jelly-roll fashion.
- ake in preheated oven, 350° about 1 hour.
- It’s easy to roll with help of wax paper. Don’t keep wax paper on.
- Very fancy and very good.
