Rolled stuffed meat loaf

  • 2 pounds ground beef
  • 2 cups soft bread cubes
  • 1/2 cup milk
  • 1/4 cup minced onion
  • 1 teaspoon ground nutmeg
  • 1 teaspoon salt and 1/2 teaspoon pepper
  • 1 egg

Filling

  • 1/2 cup minced celery
  • 1/2 cup mushroom pieces
  • 1/2 cup butter or margarine
  • 1/2 cup minced onion
  • 1 cup soft bread cubes
  • 1/2 cup chopped parsley
  • 1/2 cup (about 3 oz.) crumbled blue cheese
  1. Soak bread cubes in milk, combine with beef, minced onions, seasoning, and egg.
  2. Mix thoroughly.
  3. Pat mixture into 8×14″ rectangle on sheet of waxed paper.
  4. Saute celery, mushrooms and onion in margarine until soft.
  5. Add rest of ingredients and mix well.
  6. Spread filling on meat, roll up jelly-roll fashion.
  7. ake in preheated oven, 350° about 1 hour.
  • It’s easy to roll with help of wax paper. Don’t keep wax paper on.
  • Very fancy and very good.
