Herb’s Sausage Soup

  • 1 lb. bulk sausage, browned and drained
  • 2 (16 oz) cans kidney beans
  • 1  1 lb. 14 oz. can tomatoes, broken up
  • 1 quart water
  • 1 large onion, chopped
  • 1 bay leaf
  • 1 1/2 tsp. seasoned salt
  • 1/2 tsp. garlic salt
  • 1/2 tsp. ground thyme or 1 tsp. dried leaves
  • 1/8 tsp. black pepper
  • 1/2 green pepper, chopped
  • 1 cup dried diced raw potatoes
  1. In  a large kettle combine the kidney beans, tomatoes, water, onion,bay leaf, seasonings, and sausage. Simmer covered for one hour.
  2. Add potatoes and green pepper. Cook 15 or 20 minutes until potatoes are done
  • Makes 8 servings
  • This is the soup that Steve’s father (Nancy’s father-in-law) often served when they arrived for a visit. Yummy.
