- 1 lb. bulk sausage, browned and drained
- 2 (16 oz) cans kidney beans
- 1 1 lb. 14 oz. can tomatoes, broken up
- 1 quart water
- 1 large onion, chopped
- 1 bay leaf
- 1 1/2 tsp. seasoned salt
- 1/2 tsp. garlic salt
- 1/2 tsp. ground thyme or 1 tsp. dried leaves
- 1/8 tsp. black pepper
- 1/2 green pepper, chopped
- 1 cup dried diced raw potatoes
- In a large kettle combine the kidney beans, tomatoes, water, onion,bay leaf, seasonings, and sausage. Simmer covered for one hour.
- Add potatoes and green pepper. Cook 15 or 20 minutes until potatoes are done
- Makes 8 servings
- This is the soup that Steve’s father (Nancy’s father-in-law) often served when they arrived for a visit. Yummy.
