Helen’s Bread and Butter Pickles

  • 1 1/2 cups brown sugar
  • 3/4 cup granulated sugar
  • 2 tablespoons salt
  • 1 tablespoon celery seed
  • 1/2 teaspoon red pepper
  • 2 tablespoons mustard seed
  • 1/2 teaspoon dry mustard
  • 1/2 teaspoon turmeric
  • 3 cup vinegar
  • 1 cup water
  • 9 medium cucumbers, sliced 1/4 inch thick without paring
  • 9 medium onions, sliced thin
  1. Mix dry ingredients.
  2. Blend with part of vinegar, add rest of vinegar and water.
  3. Boil 5 minutes.
  4. Add sliced cucumbers and onions.
  5. Boil exactly 3 minutes.
  6. Seal hot in small jars.
  • Makes 2 quarts.
