Herbie’s Blueberry Cake

  • 1/2 cup brown sugar
  • 1/2 cup chopped nuts
  • 1/2 tsp cinnamon
  • 1 3/4 cup flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/4 pound butter
  • 1 cup sugar
  • 3 eggs
  • 1/2 tsp vanilla
  • 1 cup sour cream
  • 2 cups blueberries
  1. Preheat oven to 350°. Grease a 9×13 pan.
  2. Mix brown sugar, nuts, and cinnamon. Set aside.
  3. Mix flour, soda, and salt.
  4. Cream butter and sugar. Add eggs, 1 at a time, and vanilla.
  5. Add flour mixture and sour cream alternately to the butter/sugar (starting and ending with dry). Mix until smooth.
  6. Fold blueberries into the batter.
  7. Put half of the batter in the 9×13 pan. Cover with the nut and brown sugar mixture. Pour in the rest of the batter and spread over the top.
  8. Bake 45 min – 1 hour, until it pulls away from the sides of the pan.
  • Steve’s father would make this each summer.
