Butternut Squash and Creamed-Spinach Gratin

This was served at the dinner for family on Friday night before the October 25, 2025 celebration of the life of Ruth Goucher Shoemaker.

Nancy no longer has a mandolin — we used a salad shooter to make butternut squash chips about 2″x2″ — not the strips that show in the picture with the recipe.
