- 2 ripe mangoes
- 1 cucumber, peeled, seeded and cut into 1/4 inch dice
- 1/4 to 1/2 Scotch bonnet chile, seeded and minced (or other hot chile — we use a small bit of Habanero)
- 1 Tbsp. minced fresh ginger root
- 2 green onions, finely chopped (white and green parts)
- 1 small bunch cilantro, coarsely chopped (about 1/2 cup chopped)
- Juice of 2 to 3 limes
- Salt, freshly ground pepper
- 1 Tbsp. brown sugar, or to taste
- Peel mangoes with paring knife. Cut flesh off the flat seed and cut into 1/4 inch dice.
- Combine the mangoes, cucumber, chile, ginger root, green onions and cilantro.
- Mix in lime juice, salt, and pepper to taste.
- Mix in brown sugar.
- Makes 2 cups.
