Mango Salsa

  • 2 ripe mangoes
  • 1 cucumber, peeled, seeded and cut into 1/4 inch dice
  • 1/4 to 1/2 Scotch bonnet chile, seeded and minced (or other hot chile — we use a small bit of Habanero)
  • 1 Tbsp. minced fresh ginger root
  • 2 green onions, finely chopped (white and green parts)
  • 1 small bunch cilantro, coarsely chopped (about 1/2 cup chopped)
  • Juice of 2 to 3 limes
  • Salt, freshly ground pepper
  • 1 Tbsp. brown sugar, or to taste
  1. Peel mangoes with paring knife. Cut flesh off the flat seed and cut into 1/4 inch dice.
  2. Combine the mangoes, cucumber, chile, ginger root, green onions and cilantro.
  3. Mix in lime juice, salt, and pepper to taste.
  4. Mix in brown sugar.
  • Makes 2 cups.
