Cinnamon Coffee Cake

  • 2 cups flour
  • 3 teaspoons baking powder
  • 2 teaspoon salt
  • 4 tablespoons sugar
  • 3 tablespoons shortening
  • 1/2 cup chopped pecans
  • 1 egg
  • 3/4 cup milk
  • 2 tablespoons orange juice
  • 2/3 cup sugar
  • 1 teaspoon cinnamon
  • butter
  1. Mix first four ingredients.
  2. Cut in shortening.
  3. Add beaten egg and milk.
  4. Spread in shallow pan and cover with sugar and cinnamon mixed.
  5. Sprinkle orange juice on top and dot with small pieces of butter.
  6. Bake at 425° for 20 minutes or until browned nicely.
  • Pecans aren’t mentioned in the directions. Does anyone remember whether they’re in the batter or the topping?
  • Serve hot or cold.
  • Bake in rectangular shaped pan, approximately 1.5″ deep.
